With a range of flavors from sweet to spicy, flowers not only add bright and elegant beauty to any dish but can impart culinary and nutritional diversity as well. Just as night owls thrive in the solitude of a midnight silence, evening pollinators do their best work in the dark and some plants have evolved to attract them. White-colored blossoms that appear blinding under bright sun transform into delicate shimmery landing pads under the lunar light, when other colors disappear from the landscape. They emit intoxicating aromas, much stronger than those of day-blooming plants, another adaptation to stay noticeable in the veiled landscape of the night.

After WWII, many Ukrainians emigrated to the Hudson Valley and Catskills region, where they soon built churches, summer resorts, and other spaces to share and preserve Ukrainian traditions. A former Ukrainian campground was where our seed company first started growing seed! Thanks to Ukrainian seed savers, this heat-resistant and never-bitter cucumber is still thriving, and a part of the history of this region is still alive.

Echinos, the Greek word from which Echinacea is derived, means hedgehog or sea urchin. While this accurately captures the bristly head of this coneflower, it does little to place the plant in space and time. Echinacea is actually native to eastern America, home to neither aforementioned creature. A widely known immune booster, it is most often grown as an ornamental. It also attracts and feeds important native pollinators, making Echinacea a healer both for us and for the environment.

Escarole is a slightly bitter green in the chicory family. It resembles lettuce, but packs plenty of vitamins and minerals, making it a great choice for the health conscious. Escarole prefers cooler temps, so grow it in early spring or late summer for fall harvests. The hearts, served with a warm dressing and caramelized walnuts and onions, make a delicious salad. Cooked escarole pairs nicely with beans for a warming fall soup. The flavor is best after frost.

The diversity of basil is a good example of how food culture has influenced backyard plant breeding. Pesto is a regional dish from Genoa, Italy. Genovese gardeners selected basil for the qualities they felt made the best pesto especially the ability to pestare, or to pound, the leaves. Thai basils, on the other hand, were bred for their strong, rich aromas that did not diminish during stir-frying.

Grow your own blue dye! Indigo is one of the oldest plant textile dyes, and it’s pretty as an ornamental too. These vigorous plants produce an abundance of side shoots for cut-and-come-again plant dye material and, as they mature, pretty clusters of pink flowers too. Achieving the famous dark blue hues requires advanced dye techniques, but it’s easy (and fun!) to produce aqua, teal, and pale blue-green with fresh leaves.
